I’m sure these knives are great, but I can slice cucumber and tomatoes just as thin, if not even thinner with my el-cheapo knive from IKEA.

im pretty sure thatthere are more stuff then diamonds are harder ceramic knifes maybe tungsten (wolfram) or shappire (aluminum oxide)
These seem totally impractical. Don’t twist ‘em, don’t drop ‘em, be extra careful when you wash ‘em and when they do need to be sharpened send them to California…. there’s a lot of downsides compared to the one upside. A good quality, well maintained steel knife seems infinitely more practical and just as useful.

I agree, I’m a professional sharpener. I strop my knives down to .25 micron diamond abrasive, and they cut better than anything through any material. Those who say “Rougher grits give a knife more bite” are full of shit. My knives bite just great, you just need good technique all the way through the sharpening and polishing process.
Having said that, I doubt a ceramic knife will shave hair absolutely great, as I’ve come across a few that I’d consider dull, they weren’t used.
