Kyocera Knives and peelers are preferred by professional chefs and home cooks worldwide You experience the difference as soon as you pick up a Kyocera Advanced Ceramics knife. The feel – incredibly light yet perfectly balanced in you palm. The blade – beautifully ground with razor sharp precision. But it’s when you actually try the knife that the ceramic advantage becomes real – an experience like no other. Imagine slices so thin, you can actually see through them. A knife that stays sharper, longer. Kyocera advanced ceramic blades offer superior edge retention, holding their edge at least 10 times longer than other professional cutlery, including high carbon steel. I’m sure these knives are great, but I can slice cucumber and tomatoes just as thin, if not even thinner with my el-cheapo knive from IKEA.

These seem totally impractical. Don’t twist ‘em, don’t drop ‘em, be extra careful when you wash ‘em and when they do need to be sharpened send them to California…. there’s a lot of downsides compared to the one upside. A good quality, well maintained steel knife seems infinitely more practical and just as useful.

@RebelWrestler45

I agree, I’m a professional sharpener. I strop my knives down to .25 micron diamond abrasive, and they cut better than anything through any material. Those who say “Rougher grits give a knife more bite” are full of shit. My knives bite just great, you just need good technique all the way through the sharpening and polishing process.

Having said that, I doubt a ceramic knife will shave hair absolutely great, as I’ve come across a few that I’d consider dull, they weren’t used.
